Marshmallow as cupcake frosting

Recently I read in Real Simple magazine a quick way to frost a cupcake..

The very same way I experimented with about 6 years ago. I'm sure tons of people have done it in the past too..I just thought it was cute that it ended up in Real Simple's September 2010 issue.


Here's what I do:

Just before you are to take your cupcakes out of the oven (maybe a minute or two), place a jumbo marshmallow on top of each one (or a couple of tiny ones if the cupcakes are tiny). When the cupcakes are done baking, you can take 'em out of the oven. With the back of a spoon, smooth the melted marshmallow over the top of the cupcake to cover it completely.

They look so cute, and sometimes the marshmallows start to toast just a little bit-and you get juuuuust a little bit of that beautiful toasted marshmallow color. Also, most marshmallows are fat free, so it's better than using regular frosting (even though it's still a ton of sugar).

Easy and no mess at all!
